Three Raw Treats

Hello Everyone, Wishing you all safe blessings if you are in the path of Irene! A couple days ago, I was in the mood to throw together some goodies for us to munch on. First up, was Chilled Raw Chocolate Fudge, the recipe came from here. Up next is the Crumbly Crust Balls, at least that's what I call them and this recipe is adapted from Heathy's Peach Cobbler Crust recipe here. What I did was take 2 cups pecans, 1/2 cup coconut, 1/2 cup dates, pinch of salt, added some raisins and dark choccie chips. Process all in food processor and roll into balls...really good. And lastly, Snowballs....Combine 1/2 cup each of whatever you like, I used pumpkin seeds, sesame seeds, almond butter, honey, sunflower seeds, raisins, dates. Once combined, make into balls and roll in coconut.....really easy! In the tall glass are the Snowballs and the little glass is the Crumbly Crust Balls!

The Best.....Almond Oatmeal Chocolate Chip Cookie Bites

Almond Oatmeal Chocolate Chip Cookie Bites



Adapted from Elana's Pantry

2 ½ cups Trader Joe's almond meal
3/4 cup old fashioned oatmeal, ground fine in blender or food processor
½ teaspoon fine sea salt
½ teaspoon baking soda
½ cup grapeseed oil (I used olive oil)
½ cup pure maple syrup
1 tablespoon pure vanilla extract
3/4 cup dark chocolate chips (such as Ghiardelli 60% Cacao)
  1. In a large bowl, combine almond flour, ground oatmeal, salt and baking soda
  2. In a medium bowl combine grapeseed oil, maple syrup and vanilla
  3. Stir wet ingredients into the almond/oatmeal flour mixture until thoroughly combined
  4. Fold in chocolate chips
  5. Spoon 2 tablespoons of dough onto a parchment lined baking sheet, press down to flatten
  6. Bake at 350ยบ for 7 to 10 minutes, until lightly golden
  7. Cool cookies on the baking sheets for 20 minutes, then serve.

No-Bake Blonde Coconut Macaroons

Mix all ingredients together well. Form into balls and refrigerate until firm.....I actually freeze them! When we make these they are gone in a few minutes because they are soooo good!

Hungry Girl's Crazy-Good Corn Chips

Howdy! Are ya ready for a salsa-type day? These chips were really easy to make and yummy! Please give them a try and let me know if ya did!

Two 6-inch corn tortillas
1/8 tsp. salt

Preheat oven to 400 degrees.

Cut each tortilla in half. Cut each half into 3 triangles, for a total of 12 triangles.

Spray a baking sheet lightly with nonstick spray. Place tortilla triangles close together on the sheet.

Cover triangles with a 1-second spray of nonstick spray (optional). Evenly sprinkle with salt.

Bake in the oven until crispy, about 8 minutes, carefully flipping about halfway through bake time.

MAKES 1 SERVING

Please serve with salsa.....yep! Could make it fresh if ya like!

Banana Oat Cake

OMG, did I find an easy and yummy treat for you! It comes from Averie's here. It is a Microwave Banana Oat Cake....so tasty! Thank you Averie!

Microwave Banana Oat Cakes


1/2 Banana, mashed

3 Tbsp Dry Whole Rolled Oats

**I used (1) package stevia and sprinkled in some cinnamon. Check the link to Averie's to see what she did.

Yields 1 oat cake

Mash Banana, Combine & Stir All Ingredients

Spray down a clean bowl or dish with cooking spray or nonstick spray.

Transfer the mixture into the sprayed bowl and microwave for 90 seconds.

Remove from the microwave and just wait a minute or two for it to cool and firm up a bit. And then, it will pop right out.

Really good! Can spread whatever kind of nut butter on there if ya like!

Vegan Chocolate Chip Cookies

Howdy Peeps, long time no blog, SO in your honor I made you Vegan Choccie Chip Cookies!

Vegan Chocolate Chip Cookies

2 cups flour
2 tsp. baking powder
1/2 tsp salt
1/4 tsp cinnamon
1 tsp ground coffee
1/2 cup dark choc. chips
1 cup sugar (I used 3/4 cup stevia)
1/2 cup olive oil
1 tsp vanilla extract
1/4 cup water
1/4 cup shredded coconut

Throw all together in a bowl and oven is set at 350 degrees, scoop onto greased baking sheet. Bake for 15 mins, if using a large cookie scoop or 11 mins for small one.

Deviled Egg Container!

I decided that the deviled egg container needed to find another purpose if it was to keep residing in our residence, so it holds Protein Balls very nicely.

Raw Protein Balls


2 tablespoons of almond butter or organic natural peanut butter (no salt or sugar added) (I used 1/4 cup)

2 tablespoons of agave nectar (I used 1/4 cup)

1/2 cup of naturally flavoured vanilla protein powder sweetened with a natural sweetener. (Sun Warrior) (I used 1 cup)

2 tablespoons of organic shredded coconut (I used 1/4 cup)

You can also add 1 tablespoon of slivered almonds and 1 tbsp of raisins (I omitted the almonds and added 2 T. raisins)

*I also, added 3 medjool dates, 1 packet of stevia, and another 1/4 cup agave.....*I wanted to make this a bigger batch)

Mix all the ingredients well. (I used my Food Processor)

The balls should fit in the center of the palm of your hand

Put them into the fridge so they can set

Hemp Walnut Brownies

Hemp Walnut Brownies

1 cup hemp seeds
1 cup raisins
2/3 cup dried shredded coconut
1 T. coconut oil
1/4 cup cacao powder
1/4 cup agave/honey
dash of salt

1/4 cup walnut pieces

Blend all ingredients in food processor (except walnuts) until the mixture forms a ball of dough. Press into an 8X8 pan. Press walnut pieces into the top of brownies. Chill, cut, and serve.
